1. Mix together the turkey mince, garlic, carrot, sweetcorn, coriander and seasoning. Form into 6 burgers, flatten to a depth of 2 cm. Heat a 1 tbsp of oil in a large frying pan and cook the burgers for 15-20 minutes, turning once.
2. Add the onion rings and cook until golden and caramelised.
3. Cut the focaccia into six and slice each through the middle.
4. Divide the spinach and watercress salad between the six portions of bread, add the turkey burger and top with some of the caramelised onions then place the lid of the bread on to finish.
