Steak and Stilton Cream

ingredients

serves 4
1 lb (450 g) rump steak, strips
1 tbls (15 g) 1/2 oz butter
1 tbls (15 g) 1/2 oz plain flour (All purpose)
7 fl oz (200 ml) fresh milk
2 oz (50 g) Stilton, grated
2 tablespoons double cream (heavy cream)

accompaniments (you may need these)

method

1. Saute the steak in the butter to seal. Stir in the flour and cook for 1 minute. Gradually add the milk stirring until the sauce thickens, boils and is smooth. Cook for 2 minutes.

2. Remove the pan from the heat and stir in the Stilton. Just before serving stir in the cream.

3. Serve with brussels sprouts, carrots, saute potatoes and onions.
