method
1. Allow 175 g (6 oz) fish per person.
2. Wash and trim the fish, wipe and place on a greased grill grid.
3. Brush with melted butter and sprinkle with salt and pepper.
4. Grill gently for about 15 minutes altogether, turning the pieces once, brushing the second side with butter and sprinkling with salt and pepper.
5. Serve with grilled mushrooms and a tomato or other well flavoured sauce.
