method
1. Soak the apricots for 8 hours in cold water. Put them in a pan with the lemon juice and the sugar; bring to the boil and simmer for 20 minutes.
2. Set aside to cool. Strain the apricots, chop them roughly and mix with the pepper, apple and celery. Stir in the breadcrumbs, melted butter, orange rind and the eggs.
3. Season to taste and bind the stuffing with about 6 tablespoons of the apricot juice.
