1. Preheat the oven to 200°C (400°F) gas mark 6.
2. Melt the butter in a saucepan over a moderate heat, add the apples and cinnamon and cook gently for 5-7 minutes until the apples are tender.
3. Drain the apples and put to one side.
4. Cut the pastry in half , roll out and line an 18 cm diameter loose bottomed flan ring. Fill the lined case with half the apples. Sprinkle over the crumbled cheese and spoon the remaining apple on top of the cheese.
5. Mix the egg yolk and milk together in a bowl.
6. Roll out the remaining pastry to cover the flan ring. Press the edges together to seal the pastry. Brush the pastry with egg wash. Make a small hole in the lid with a knife.
7. Put the pie onto a baking sheet in the preheated oven and bake for 30-35 minutes.
