1/2 stick (4 Tbsp) 50 g unsalted butter
1/4 cup (50 g) 2 oz soft brown sugar
3 large under ripe bananas, peeled and cut on a diagonal into 5 cm pieces
142 ml (1/4 pint) carton double cream (heavy cream)
6 ready made pancakes
method
1. Heat the butter in a heavy based frying pan, then add the sugar and cook stirring periodically until it dissolves and bubbles.
2. Add the banana and cook until tender, then stir in the cream.
3. Heat the pancakes as per pack instructions, then divide between 3 serving plates.
4. Pour over the caramel bananas and serve immediately.
