1. Put the pork cubes in a bowl and mix in all the Ingredients for the marinade. Leave to marinate for 30 minutes.
2. Heat the oil in a wok or frying-pan, and fry the mushrooms in 2 batches for 3 minutes each time.
3. Remove with a slotted spoon and put them on a plate lined with some absorbent paper.
4. In the remaining oil fry the pork pieces in 3 batches, each time for 3 minutes.
5. Take them out with a slotted spoon and drain in a colander.
6. You may need to add just another tsp of oil to the wok or pan. Heat the oil again, then fry the chopped garlic and ginger, stirring all the time, for 2 minutes.
7. Add the hot water and soy sauce, stir and add the fried meat and mushrooms. Stir them around for 1 minute, then add the rest of the Ingredients .
8. Stir and keep stirring for 1 more minute. Taste, and adjust the seasoning.
9. Serve immediately, with plain boiled rice, potatoes or pasta accompanied by a salad.
