Chili Corn Muffins

ingredients

serves: 8-10
150 g yellow corn Masa Harina
2 cups (200 g) 7 oz self-raising flour
2 tbsp (25 g) 1 oz brown sugar
1 birds eye chili, finely chopped
1 tsp baking powder
2 medium size eggs
1/2 stick (4 Tbsp) 50 g melted butter, cooled
1 tbsp chopped coriander
2/3 cup (150 ml) 1/4 pt buttermilk

method

1. Mix all the dry ingredients together, add the remaining ingredients and mix until incorporated.

2. Divide the mixture between the muffin tins and bake for 25 - 30 minutes at 190°C (375°F) gas mark 5.
