75 g dairy free spread
1/4 cup (50 g) 2 oz caster sugar (superfine granulated)
juice of 1 lemon
8 dessert apples, peeled and sliced into wedges
2 Sainsbury's teacakes (most of the range are free from milk)
1 tsp cinnamon
2 tbsp icing sugar (confectioners sugar)
mint sprigs to decorate (optional)
1 pack apple crackles to decorate (optional)
method
1. Melt the spread/margarine in a large frying pan. Toss the apple wedges in the lemon juice.
2. Add the sugar and apples to the pan and cook over a medium heat for 20 minutes until caramelised.
3. Meanwhile, toast the teacakes. Divide the apple mix between each half of the teacakes.
4. Mix the cinnamon with the icing sugar and sprinkle over each topped cake.
5. Decorate with apple crackles and a sprig of mint.
