Fried Bananas (Pisang Goreng)

ingredients

serves: 4 - 6
3/4 cup (100 g) 4 oz rice flour or plain flour
2 tbsp (1 oz) 25 g butter
125 ml coconut milk
a pinch of salt
4 medium size fairly ripe bananas
clarified butter or 2/3 cup (150 ml) 1/4 pt olive oil
icing sugar (confectioners sugar), optional

method

1. Mix the flour, butter, coconut milk and salt into a smooth batter, adding a little water, if necessary, to get a coating consistency.

2. Cut the bananas into halves, then halve them again lengthways.

3. Coat well with batter and fry in clarified butter or olive oil, 3 or 4 pieces at a time, for 2 - 3 minutes a side, until golden brown.

4. They can be eaten hot or cold, sprinkle them with some icing sugar if you wish.
