1. To oven bake: Preheat the oven to 180°C (350°F) Gas Mark 4.. Peel the bananas and place in an ovenproof dish. Sprinkle with 2 x 5 ml spoons of the sugar and place in the oven for 20 minutes.
2. Meanwhile make the sauce: Place the evaporated milk, butter and sugar in a small saucepan. Heat gently until the butter has melted and the sugar has dissolved, then bring to the boil and boil for 2 minutes. Remove from the heat, stir in the chocolate and mix well. Keep warm.
3. To serve place two bananas on each dish and spoon over the sauce.
4. To barbecue: First make the sauce.
5. Place the bananas in their skins in the charcoal embers, just away from the hottest part of the coals. Cook for 3 minutes, then turn over with tongs and cook for a further 2 minutes, until the skins are charred. (Alternatively plac in a hot oven for 10 minutes)
6. Remove from the coals with tongs and serve immediately, peeled, with the warm sauce.
