method
1. Melt the butter in a small frying pan, add the sugar, sultanas, orange zest and juice and rum if using.
2. Add the bananas and simmer for 2 minutes each side, until the bananas soften and the liquid becomes syrupy.
3. Serve the bananas with the juice spooned over and the coconut sprinkled over the top.
4. Delicious served with creme fraiche or lightly whipped double cream, flavoured with a little grated orange zest and a little icing sugar to taste.
