125 g couscous, rehydrated as per pack instructions and cooled
20 g fresh parsley, finely chopped
15 g fresh mint, finely chopped
3 spring onions, finely chopped
3 tomatoes, cut into wedges
5 cm cucumber, finely chopped
Zest and juice of 1/2 lemon
Salt and freshly ground black pepper
4 lamb chops
method
1. To make the savoury couscous, combine together all the ingredients. Then put to one side.
2. In the meantime, cook the lamb chops under the grill or in a griddle pan according to the pack instructions.
3. To serve, pile the couscous onto individual plates and top with 2 lamb chops.
