Lamb Stuffed Marrow recipe

ingredients

4 tbsp oil
1 onion, finely chopped
250 g lamb mince
1 garlic clove, crushed
4 tbsp tomato puree (paste)
75 g long grain rice, cooked and refreshed
4 tbsp ground cinnamon
25 g pinenuts
25 g raisins
salt and freshly ground black pepper
1 marrow, halved and deseeded
2 tbsp (1 oz) 25 g butter, softened
300g tub arrabbiata sauce

method

1. For the stuffing: Heat the oil in a frying pan and saute the onions and mince together until the mince is browned. Then add the garlic, tomato puree and cinnamon and cook for a further 1-2 minutes. Remove from the heat and add the remaining ingredients.

2. To stuff and serve: Preheat the oven to 190°C (375°F) Gas Mark 5.

3. Place the marrow into a roasting tray and fill with the stuffing mixture. Dot with butter cover with foil and roast in the oven for 45 - 50 minutes.

4. Finally heat the sauce, then flood a serving plate and top with a slice of a marrow.

I have made this for my boyfriend before and he really enjoyed it.
i think its a shame that a classic recipe such as this one isn't cooked by more people.

I made this with minced cooked lamb as a way of using up leftovers from a joint, and it was excellent. However, 4 tbsp of cinnamon is surely a mistake! I used two (small) teaspoons, and this was quite adequate. Marrow roasting tips - tie on the "lid" with string! And give a large marrow 4 - 5 mins in the microwave before putting in the oven to start it cooking, otherwise it may take more than 45 mins to cook through.
