1. Preheat the oven to 200°C, 400°F, Gas Mark 6.
2. Heat the oil in a heavy based pan. Gently fry the onion and garlic.
3. Stir in the curry powder and cook for a further 2-3 minutes.
4. Push the onion to one side and seal the lamb chops.
5. Stir in the stock and bring to the boil
6. Place in the oven for 1 hour, adding the apricots 20 minutes before the end of the cooking time.
