method
1. Place the apples, blackberries, water and sugar in a large pan and simmer for 10 minutes.
2. Strain the fruit. Boil the juice until reduced to 150 ml, then stir into the fruit.
3. Cut the bread to fit exactly inside a 900 ml souffle dish. Place one slice on the base, then spoon over one third of the fruit mixture. Repeat the layers, finishing with bread.
4. Choose a saucer that just fits into the dish, place on top and weight down. Chill for 3 hours.
5. To freeze: Place the dish in a freezer bag or wrap in foil, seal, label and freeze.
6. To thaw: Leave in the refrigerator for 4 hours.
7. To thaw by microwave, microwave on defrost for 20 minutes.
8. Leave to stand for 20 minutes, then turn out onto a serving plate.
9. To serve: Serve with natural yogurt or fromage frais.
