8 lamb chops
1 red onion, peeled and finely sliced
50 g pitted black olives, halved
50 g pitted green olives, halved
100 g feta cheese, crumbled
1 part baked ciabatta, cooked as per pack instructions, cooled and sliced on an angle into 4 pieces then lightly toasted
120 g pack herb salad
method
1. Preheat the grill to a moderate heat.
2. Place the chops on a grill pan and grill for 10 minutes, turn over and grill for a further 5 minutes.
3. Top the chops with the onion, olives and feta cheese and grill for 3 minutes.
4. Serve the chops on a toasted bread crouton and serve alongside the herb salad.
