2 Granny Smith apples, peeled, cored and grated
25 g fresh breadcrumbs
25 g pine kernels
1 1/2 tbsp freshly chopped sage
salt and freshly ground black pepper
4 lean, boneless pork chops
method
1. Place the grated apple, breadcrumbs, pinenuts, sage and seasoning in a bowl and mix well.
2. Grill the pork chops under a preheated moderate grill for 15 minutes, turning occasionally.
3. Divide the apple mixture into 4 and press one portion onto the top of each chop.
4. Grill for a further 2 - 3 minutes until the topping is golden.
