2/3 cup (150 ml) 1/4 pt dry cider
1 clove garlic, finely chopped
juice of 1 lemon
4 tbsp orange marmalade
2 tbsp clear honey
4 tbsp soy sauce
1 tsp English mustard
2 tsps balsamic vinegar
salt and freshly ground black pepper
4 pork loin steaks
1. Preheat the oven to 190°C (375°F) gas mark 5.
2. Heat the ingredients for the glaze until boiling, continue to cook until the liquid is reduced by half, then keep warm.
3. Lay each pork steak in a piece of foil, pour over a little of the glaze, gather up the foil like a parcel and bake in the oven for 18-20 minutes.
4. Arrange the pork steaks on a serving dish, pour over the glaze and serve with an apple and watercress salad.
