method
1. Preheat the oven to 190° C, 375° F, Gas Mark 5.
2. Dip the pork medallions into the beaten egg and then dip one side of a slice of cheese.
3. Place the dipped side of cheese facing upwards on top of the medallion.
4. Coat all the medallion and cheese sandwich with the breadcrumbs, and place onto a baking tray.
5. Repeat with the other medallions.
6. Cook in the oven for 35 minutes or until the cheese has melted and the crumb browned and the pork cooked through.
7. Serve immediately with boiled new potatoes and a green vegetable of your choice.
