Pork with Lemon and Coriander Stuffing Balls recipe
ingredients
1 kg (2.2 lb) pork leg joint (fresh ham) fresh leg of pork
juice and zest of 1 lemon
20 g fresh coriander, finely chopped
500 g pork sausagemeat
1 1/4 cup (75 g) fresh white breadcrumbs
salt and freshly ground black pepper
method
1. Place the pork in a roasting tin and cook as per pack instructions.
2. Meanwhile place the remaining Ingredients in a bowl and mix well.
3. With lightly floured hands, shape the mixture into 16 balls.
4. Place around the pork joint 45 minutes before the cooking time is complete.
