Pork and Pesto Panini

ingredients

serves 2 - 3
1 tbsp olive oil
2 tsp spoons pesto
1 clove garlic, crushed
220 g pack pork loin medallions
1 red pepper, deseeded and roughly chopped
salt and freshly ground black pepper
1 ciabatta loaf
100 g lettuce

method

1. Mix a 1 tsp of oil, pesto and garlic into a mixing bowl. Place the steaks into the bowl, spreading the mixture over the meat.

2. Leave the meat to marinate for 1 hour. Preheat the oven to 200°C, 400°F, Gas Mark 6.

3. Place the pepper onto a baking sheet with the remaining oil and bake for 15 minutes.

4. When the meat has finished marinating place a frying pan over a moderate heat. Season the steaks and place them into the hot pan. Cook for 3 minutes either side.

5. Whilst the potk is cooking warm the bread in the oven. When the pork is cooked add the rocket to the pan for 30 seconds to wilt it.

6. Cut the ciabatta into 2-3 pieces, cut each piece in half and place the pork, pepper and lettuce onto the bottom pieces of bread and replace the tops.
