1 1/2 fillets of pork
3 tbsp teriyaki marinade
2 courgette (zucchini)s, sliced
For the peanut sauce:
110 g (4 oz) smooth peanut butter
75 ml (2 3/4 fl oz) coconut milk
2 tbsp soy sauce
olive oil
rice vinegar
dash of chilli sauce
method
Slice the pork and marinade in the teriyaki with the courgettes.
for the sauce
1. Heat the smooth peanut butter, coconut milk, soy, olive oil and rice vinegar.
2. Add a dash of chilli sauce and enough water to loosen the sauce.
3. Thread the pork and courgette onto skewers and grill.
4. Serve with the sauce.
