Banana, Walnut and Chocolate Muffins recipe

ingredients

2 large bananas, mashed
40 g (1 1/2 oz) walnut peices
80 g (3 oz) white chocolate drops
3 1/2 cups (350 g) 12 oz plain flour (All purpose)
2 1/2 tsp baking powder
1/2 cup (100 g) 4 oz caster sugar (superfine granulated)
1 stick (8 Tbsp)4 oz (100 g) butter
2 eggs
1 1/4 cup (1/2 pint) 300 ml milk
1/4 tsp salt

method

1. Preheat the oven to 200°C/400°F/gas mark 6.

2. Sift the flour and baking powder together into a mixing bowl. Add the sugar and salt.

3. Melt the butter in a saucepan over a medium heat. Remove from the heat and whisk in the eggs and milk. Once evenly mixed, fold into the flour with the mashed bananas, the chocolate drops and walnut pieces.

4. Spoon the muffin mixture into into greased muffin tins and bake for 20 minutes until golden. Remove from oven and leave to cool for 10 minutes.

This is a really awesome muffin recipe! R.A.M(really awesome muffins) is very thankful for this recipe, it has bought us many a profeit as we have adapted the recipe to our unique taste in muffins.
