Beef Steak and Caramelised Onion Sandwich

ingredients

serves 4
375 g fillet steak
1 tbls (15 g) 1/2 oz butter
2 red onions, peeled and sliced into rings
1 tsp sugar
40 g black olives
1 herb foccacia loaf
30 g mixed herbs
2 tomatoes, sliced

method

1. Preheat the oven to 180°C (350°F) Gas Mark 4..

2. Heat a large frying pan until very hot and sear the steak on both sides, then place on a baking tray in the oven for 15 minutes.

3. Heat the butter in a small pan and cook the onions gently for 10 minutes.

4. Add the sugar, turn up the heat and cook stirring continually until the onions caramelise then add the olives.

5. Slice the foccacia in half horizontally lay the herbs on the bottom half and add the sliced tomatoes.

6. Slice the fillet steaks horizontally and lay them over the tomatoes then top with the onion and olive mixture, place the top of the loaf on, cut into four and serve immediately
