Curried Turkey with Mango

ingredients

serves 4
1 lb (450 g) cooked diced turkey thigh meat
1 ripe mango, peeled and diced
1 tbsp olive oil
2 medium onions, peeled and cut into wedges
2 - 4 garlic cloves, peeled and crushed
1 - 2 red chillies, deseeded and chopped
1 - 2 tbsp red curry paste or curry powder
1 tbsp plain white flour (All purpose)
450 ml (3/4 pint) turkey or chicken stock
4 tbsp low fat natural yogurt
2 tbsp freshly chopped coriander

to serve

freshly cooked saffron flavoured basmati rice to serve

method

1. Place all the ingredients in a bowl and mix thoroughly.

2. Arrange the shredded lettuce on a serving plate, spoon the curried turkey over the top and garnish with the coriander.
