Creamy Turkey with Fine Beans and Wild Rice recipe
ingredients
1/2 tbsp olive oil
1 yellow pepper, deseeded, cut into strips
100 g pack fine beans, cut in half diagonally
250 g cooked turkey, cut into strips
250 g tub mascarpone cheese
2 tbsp curry paste
juice of 1 lemon
salt and freshly ground black pepper
250 g wild rice
method
1. Heat the oil in a wok or frying pan and stir-fry the yellow pepper and beans for 1-2 minutes.
2. Add the cooked turkey, mascarpone cheese, curry paste and lemon juice, heat thoroughly and season to taste.
