4 large flat mushrooms
3 tbsp olive oil
150 g can smoked mussels
150 g can smoked oysters, roughly chopped
125 g wild mushrooms, ie shittake, oyster, roughly chopped
juice of 1 lemon
2 tbsp fresh parsley, chopped
salt and freshly ground black pepper
method
1. Brush the flat mushrooms with oil and gently grill for 5 minutes.
2. Meanwhile, fry the wild mushrooms in a pan for 2-3 minutes. Stir in the mussels and oysters and cook for a further 2 minutes.
3. Add the lemon juice, parsley and season to taste.
4. Pile the mixture into the mushrooms.
5. Serve garnished with green salad leaves and lemon wedges.
