Microwave Plaice Rolls with Caper Sauce

ingredients

serves 4
8 plaice fillets, skinned
4 tbsp dry white wine
1 tsp lemon juice
2 medium egg yolks
5 tbsp cream
2 x 1 tsps capers
salt and freshly ground black pepper to taste

method

1. Roll up the plaice fillets and arrange in a shallow dish in a single layer.

2. Mix together the wine and lemon juice, season with salt and pepper, then sprinkle over the fish.

3. Cover and cook on HIGH for 5 minutes.

4. Using a slotted spoon, transfer the plaice rolls to a warmed serving dish and cover with foil to keep warm.

5. Reserve the fish liquor.

6. Beat the egg yolks and cream together in a small bowl, then stir into the fish liquor.

7. Add the capers, then cook on HIGH for 2 1/2 minutes, stirring every 30 seconds.

8. Pour the sauce over the fish and serve immediately.

Be careful with your lemon juice. Mine curdled the cream.
I'd do the recipe again but with no lemon juice. ~I don't see it's worth it for the merest soupcon of taste. I had to work hard to retrieve the sauce. I also felt that the capers provided the bulk of the taste so I doubled the dose. All in all, very nice.
