1. Roll up the plaice fillets and arrange in a shallow dish in a single layer.
2. Mix together the wine and lemon juice, season with salt and pepper, then sprinkle over the fish.
3. Cover and cook on HIGH for 5 minutes.
4. Using a slotted spoon, transfer the plaice rolls to a warmed serving dish and cover with foil to keep warm.
5. Reserve the fish liquor.
6. Beat the egg yolks and cream together in a small bowl, then stir into the fish liquor.
7. Add the capers, then cook on HIGH for 2 1/2 minutes, stirring every 30 seconds.
8. Pour the sauce over the fish and serve immediately.
