Lemon Sole with Chilled Prawn and Watercress Sauce

ingredients

serves 4
200 g carton natural Greek yogurt
2 tbsp mayonnaise
1 tsp horseradish or mild mustard
75 g bag Watercress (salad cress), chopped
125 g prawns, defrosted, drained and roughly chopped
salt and freshly ground black pepper
1 tsp olive oil
2 tbsp (1 oz) 25 g butter
4 tbsp plain flour
8 fillets lemon sole, defrosted

method

1. Place the yogurt in a bowl with the mayonnaise, horseradish or mustard, watercress, prawns and seasoning mix well and chill until required.

2. Heat the oil and butter in a frying pan.

3. Mix together the flour and seasoning on a plate and use to coat both sides of the fish.

4. Cook the fish in batches and serve with the prawn and watercress sauce.
