150 g natural yogurt
125 g finely chopped frozen spinach
1 small onion, chopped
50 g fresh wholemeal breadcrumbs
1 medium size egg yolk
salt and freshly ground black pepper
6 x 125 g plaice fillets
To garnish :
freshly chopped parsley
method
1. Preheat the oven to 190°C, 375°F, Gas mark 5.
2. Mix together the yogurt, spinach, onion, breadcrumbs, egg yolk and seasoning, to taste, in a bowl.
3. Divide the mixture between the plaice fillets and roll the fish up. Place them in a lightly buttered ovenproof dish and cook in the oven for 20-25 minutes.
