method
1. Sprinkle the fish with the rind and juice of 1 orange, the lemon juice and salt and pepper to taste.
2. Roll up and place in a buttered ovenproof dish.
3. Cover and cook in a preheated moderate oven, 180°C, 350°F, Gas Mark 4 for 20 minutes or until just tender. Leave to cool.
4. Add the remaining grated orange rind and juice to the mayonnaise and mix well.
5. Place the fish in a serving dish and pour over the mayonnaise.
6. Garnish with anchovy fillets and orange segments. Serve cold.
