4 mullet, whole and cleaned
60 ml (4 tbsps) oil
60 ml (4 tbsps) vinegar
piece of onion, skinned and finely chopped
few peppercorns
1/2 bayleaf or a few parsley stalks
tomato sauce
method
1. Rinse the fish and dry them well. Put them in a dish with the oil, vinegar and flavourings and leave them to marinade for about 1 hour, turning them several times.
2. Drain the fish and put them on a greased grill grid. Cook under a medium heat for about 10 minutes, basting with some of the marinade and turning them once.
