Lemon Sorbet

ingredients

serves 6
2 egg whites
1/4 teaspoon almond extract
2 ounces vodka
1 1/2 cups chilled Champagne
1 cup lime ice cream (use sherbet for a lighter substitute)
4 ounces crushed ice

method

1. Mint sprigs or strawberries (for garnish)

2. In a blender, combine the egg whites and almond extract and process until you get a frothy mixture.

3. Pour in the vodka and champagne. Add ice cream and crushed ice. Mix until evenly blended. Cover and place in the freezer until icy cold, about 10 minutes.

4. Pour into cordial glasses or flutes. Garnish with mint or a strawberry.
