Chicken Pimento

ingredients

4 chicken breasts
garlic clove, crushed
1 tbls (15 g) 1/2 oz butter
200 g (7 oz) can pimentos, drained
4 oz (100 g) English Cheddar, grated
2/3 cup (150 ml) 1/4 pt fresh double cream (heavy cream)
2/3 cup (150 ml) 1/4 pt fresh milk
red pepper to garnish

method

1. Gently saute the chicken and garlic in the butter for 15-20 minutes until the chicken is cooked.

2. Blend the pimentos, cheese and cream. Stir in the milk.

3. Place into a pan and gently heat through.

4. Serve the chicken accompanied with the sauce, garnished with red pepper accompanied with green beans and a baked potato.
