Bavarian Cream Flan

ingredients

serves 6
2 eggs, beaten
1/4 cup (50 g) 2 oz caster sugar (superfine granulated)
1 1/4 cup (1/2 pint) 300 ml fresh milk
1 teaspoon gelatine dissolved in 1 tablespoon hot water
vanilla essence
2/3 cup (150 ml) 1/4 pt fresh double cream (heavy cream)
15 cm (6 inch) sponge flan case
2 sticks rhubarb
2 tablespoons strawberry jam, melted

method

1. Beat together the eggs and sugar, stir in the milk.

2. Cook in a saucepan over a low heat stirring until the custard thickens. Add the gelatine.

3. Strain the custard and allow to cool.

4. Mix a few drops of vanilla essence into the cream and fold into the setting sauce.

5. Use to fill the sponge flan case.

6. Poach the rhubarb in a little water until tender.

7. Cool and place on the flan. Brush with the jam.
