ingredients
2 cups (225 g) 8 oz self raising (self rising) flour
2/3 cup (100 g) 4 oz self raising (self rising)wholemeal flour (whole grain)
1/2 teaspoon baking powder
1 banana, mashed
3/8 cup (75 g) brown sugar
2 eggs, beaten
1 1/4 cup (1/2 pint) 300 ml fresh milk
3/4 stick (6 Tbsp) 3 oz (75 g) butter, melted
4 oz (100 g) chocolate chips
method
1. Sieve the flours and baking powder.
2. Mix banana and sugar until smooth, add the eggs, milk and butter.
3. Stir into dry ingredients with the chocolate chips.
4. Spoon into 12 greased muffin tins.
5. Bake at 200°C (400°F) Mark 6 for 25 minutes. Cool on a wire rack.
