Avocado Medley recipe

ingredients

1 avocado, peeled and diced
4 oz (100 g) prawns, peeled
grated rind of lemon
1/4 cucumber, diced
65 ml (2 1/2 fl oz) soured cream
65g (2 1/2 oz) natural yogurt
1 raddichio
prawns and lemon slices to garnish

method

1. Mix together the avocado, prawns, lemon rind and cucumber.

2. Fold in the soured cream and yogurt.

3. Line 4 glasses with raddichio leaves and fill with the avocado mixture.

4. Garnish with lemon slices and prawns.
