Rum and Raisin Chocolate Sauce #2

ingredients

makes 250 ml
50 g seedless raisins
25 g cocoa
2 tbls (25 g) 1 oz cornflour
2 tbsp (25 g) 1 oz brown sugar
175 ml milk
2-3 tbsp rum
2-3 tbsp single cream

method

1. Chop the raisins. Blend the cocoa, cornflour, and sugar to a smooth paste with a little of the milk.

2. Put the rest of the milk in a saucepan and heat to boiling point.

3. Stir it into the cocoa paste.

4. Return the mixture to the saucepan and stir until boiling.

5. Add the raisins, rum and cream, and stir.

6. Serve hot or cold.

Serve on ice cream, plain cake, bread pudding or rice pudding.
