method
1. Soften the gelatine in the cold water in a small heatproof container.
2. Stand the container in a pan of hot water and stir until dissolved, then add the boiling water and sugar.
3. Stir to dissolve the sugar.
4. Add the lemon juice.
5. Chill until just beginning to set, then whisk until frothy.
6. Whisk the egg whites until just stiff and fold into the jelly.
7. Slice the bananas and arrange them in the bottom of a glass dish.
8. Pile the jelly mixture on top and chill for about 1 hour until firm.
