method
1. Peel and core the apples and cut each apple into 4 round slices.
2. Discard the rounded ends.
3. Sprinkle the slices with a little sugar if very sour.
4. Season the flour with salt and pepper and coat the slices quickly before they discolour.
5. Heat a little fat in a frying pan and fry the slices gently, turning once, until golden and just tender but not yet soft.
6. Use as a garnish for any fried or grilled/broiled pork dish.
