1 .Cut any large potatoes into even-sized pieces. Cook in salted water for about 1 5 minutes, until tender - test with point of a knife. Drain off all the water, return pan to a gentle heat for the potatoes to dry.
2. Add the butter in pieces and use a potato masher or a fork to mash well. Season to taste.
3. Pour over the hot milk and beat the potatoes well with an electric mixer or balloon whisk until fluffy. Adjust seasoning.
