Schmaltz Herrings

ingredients

serves 4
8 pickled rollmop herrings, drained
1 medium onion, skinned and thinly sliced
2 dessert apples, peeled, cored and sliced lemon juice
5 fl oz (142 ml) soured cream
salt and freshly ground pepper
4 gherkins, finely chopped
cayenne pepper

method

1. Slice the herrings in rings and arrange them on a flat serving dish.

2. Place the onions over the fish. Toss the apples in a little lemon juice and place on top of the fish and onion.

3. Spoon over the soured cream mixed with the seasoning and gherkins.

4. Sprinkle with a little cayenne pepper before serving.

Delicious but NOT Schmaltz Herring

This recipe seems fresh and tasty but schmaltz herring is not anything like this. Though exact recipes for schmaltz herring may differ slightly, every schmaltz herring recipe will have raw herring preserved for at least a few days in salt and fat. Fat rendered from poultry or meat is called schmaltz in Yiddish and this is where schmaltz herring gets its name from.
