Pesto #2

A delicious sauce to toss hot spaghetti.

ingredients

2 oz (50 g) fresh basil leaves
2 cloves garlic
2 tablespoons pine nuts
4 fl oz (120 ml) olive oil
2 oz (50 g) Parmesan cheese, grated
salt and freshly ground black pepper

method

1. Measure the basil, garlic and pine nuts into the blender or food processor and process until the herbs are finely chopped.

2. With the machine running, add the oil in a fine stream until the paste is creamy.

3. Transfer to a bowl, add the Parmesan and seasoning to taste. Mix well together, then pack into a screwtop jar for storing
