Apple and Walnut Salad

ingredients

serves 8
6 red apples
1 1/4 cup (1/2 pint) 300 ml natural yogurt
2 tbsp (30 ml) lemon juice
salt and freshly ground pepper
125 g (4 oz) walnuts, chopped

method

1. About 2 hours ahead, core and roughly chop the apples. In a large bowl combine the yogurt, lemon juice and plenty of seasoning.

2. Stir in the apple to coat evenly.

3. Cover with cling film and leave in a cool place. Just before serving stir in the chopped walnuts.
