Potato Meat and Pine Nut Rissoles recipe

ingredients

3 medium potatoes, cooked
1 lb (450 g) minced beef
1 medium egg, beaten
2 oz (50 g) pine nuts
2 oz (50 g) currants
1/2 tsp thyme
1/2 tsp dill
1/2 tsp parsley
salt and pepper to taste
oil for frying

method

1. Mash potatoes thoroughly. Add the minced beef and beaten egg and mix well.

2. Add the pine nuts, currants, herbs and seasoning and mix well.

3. Using wet hands, form the mixture into little, flat, round patties and fry in deep fat until brown.

serves 4.
