750g (1 3/4 lb) potatoes, cooked and peeled
4 oz (100 g) streaky bacon, chopped
2 medium onions, peeled and diced
1/2 stick (4 Tbsp) 2 oz (50 g) butter
3 medium eggs
3 tbsp milk
1 green pepper, deseeded and diced
4 oz (100 g) cooked ham, diced
Small pinch ground nutmeg
Salt and pepper to taste
1 tbsp chives, snipped for garnish
method
1. Cut cooked potatoes into thick slices.
2. Fry bacon and onions in the butter until onions are transparent.
3. Add the potato slices and cook until nicely browned.
4. Beat the eggs and add them to the milk, then mix together with the remaining ingredients.
5. Pour over the potato mixture and cook gently until the egg has set.
