1. With the prongs of a fork, scrape down the sides of the cucumber to make a ridged effect. Slice very thinly and lay in a shallow dish. Sprinkle with the chopped mint and seasoning.
2. Pour 150 ml (1/4 pint) of the apple juice over. Chill for 15 minutes.
3. Slice the strawberries if large; otherwise, cut them in half.
4. Put into a small bowl and pour the remaining apple juice over. Chill for 15 minutes.
5. Drain the cucumber and strawberries and arrange them attractively on a serving dish.
6. Garnish with mint.
