Tofu Spread

ingredients

serves 4
400 g (14 oz) tofu
1 garlic clove, skinned and finely chopped
25 ml (1 1/2 tbsp) olive oil
7.5 ml (1 1/2 tsp) tomato puree (paste)
1 tsp (5 ml) Dijon mustard
salt and pepper, to taste
4 spring onions, green leaves, discarded,
finely chopped 1 tbsp (15 ml) chopped fresh parsley
1.25 ml (1/4 tsp) dried thyme
6 fresh basil leaves, finely sliced

method

1. Put the tofu into a blender or food processor and blend until smooth.

2. Add the garlic, olive oil, tomato puree and mustard. Mix. Season.

3. Transfer to a bowl and add the spring onions, parsley, thyme and basil, stirring until evenly mixed.

4. Cover and chill at least 1 hour.
