Cucumber sauce is frequently served alongside cold salmon and trout.
1/2 cucumber, diced
2 teaspoons salt
2/3 cup (5 fl oz) 2 tbsp mayonnaise
2/3 cup (5 fl oz) 1/4 pint whipping cream, whipped
juice of 1/2 lemon
salt and freshly ground black pepper
2 tablespoons snipped dill
1. Place diced cucumber on a plate and sprinkle with salt. Leave to stand for 30 minutes, then rinse and thoroughly dry on absorbent kitchen paper.
2. Blend together the mayonnaise and cream, then stir in the lemon juice, seasoning, cucumber and dill.
3. Turn into a serving bowl and chill well.
